Baked Quinoa n' Cheese
If there's one comfort food that I have a major weakness for, it's macaroni and cheese. It's one of those dishes that I could easily eat everyday, but don't. Being that I always try to make healthier alternatives to rather indulgent meals, I decided to experiment in the kitchen and make my own version using my favorite grain, quinoa. While it's definitely not as decadent as traditional mac n' cheese, it certainly satisfied my craving without any of the guilt.
