Quinoa Greek Salad Salad Ingredients: -1 cup cooked Quinoa (about 1/4 a cup uncooked) -Small handful of mixed greens -1/2 Peruvian Cucumber -2 Hearts of Palm -Red Onion -Kalamata Olives -Cherry Tomatoes -Feta Cheese (I didn't use any, but it would be delicious) Dressing: -2 Tablespoons Red Wine Vinegar - 1/2 Tablespoon Dijon Mustard (or more if you like a little spice) -1 Tablespoon EVOO (Finely chop all the veggies, then combine with the cooked quinoa.)
