Vegan ceviche
I figured what better way to start off the week than with one of my new favorite recipes, right? With our new apartment and busy schedules, cooking for hours is simply not realistic. However we find it very important to enjoy our food and eat healthy. For those who love to do the same, this vegan recipe will fit your lifestyle perfectly. All you need is:
1 (14 oz) can hearts of palm
2 large tomatoes (I used cherry tomatoes)
1/2 small red onion
handful fresh cilantro
1 jalapeno diced
1/4 cup lime juice
1 tablespoon olive oil
salt
pepper
