Lentils with Egg, Spinach & Arugula I could go on and on about how delicious this recipe is, but I won't. I'll just let you try it out for yourself. It's incredibly healthy, packed with protein and uses ingredients that you most likely already have in your kitchen. If you love lentils as much as I do, then this recipe is a must! Ingredients (serves 4): olive oil 1 onion, diced 2 carrots, diced 3 cups cooked lentils 2-3 minced garlic cloves 1 bunch greens such as spinach & arugula 4 eggs salt and pepper to taste 3 cooking pans Directions: Heat first pan over medium-high, then coat with olive oil.
