Homemade Butternut Squash Soup
The shelf life of a butternut squash is fairly long I learned recently. Aaron and I had went to the Farmer's market where I proceeded to buy three squashes with the purpose of making homemade soup. Three weeks later, they were still good. I adapted my recipe from here , but I substituted some ingredients and didn't make the same crostini- however, it was still delicious. Never underestimate the power of a food processor (or blender).
This is definitely a must try for fall, it has the consistency of apple sauce, but it is creamy and flavorful. I used broth instead of chicken stock, didn't use the carrot and I used dried sage instead of fresh. Even...
