A Healthier Mindset: Eat More Greens!

When I think about eating healthier, my mindset is always about “what can I add to my diet?” vs. “what can I take away?” And for me that generally means loading up on vegetables (especially green things) and yummy lean proteins like chicken, pork, and fish. A big takeaway from working with Blue Apron for the past few months has been how easy it is to sneak in a LOT of veggies. Because as much as I love salad and steamed broccoli, sometimes I want something a little richer (especially as it gets colder!).
