So, I've been spending my evening cooking ahead for the week and making leftovers more yummy for Hunter and myself for the next day or two. Happy to have tried cooking breakfast omelet muffins. I don't know about y'all, but I am not a huge fan of using my muffin pans, even though mine are Pampered Chef and supposedly easy to clean. Thanks to Pinterest I tried using cupcake liners in my muffin pans for my omelet muffins and was pleasantly surprised at how well they turned out!
