Recipe: Thai Tuna Cakes w/ Cucumber-Yogurt Dip
Summer is officially here and I'm all about quick and easy meal solutions! These days Dylan is at a half-day camp program in the mornings, leaving me a few hours to spend one-on-one time with Kennedy, fit in a little bit of email time, and then eat a quick lunch before picking heading back to his camp for pickup. Since I don't have time to cook everyday, I've been gravitating towards meals that keep and reheat well -- bonus points if they're freezer friendly too!
